Discard the soaking water. Blend the cashews coarsely with a little fresh water. Transfer to a clean glass bowl and loosely cover (do not seal). Leave the mixture at room temperature for 8–12 hours to naturally ferment. 🧠 You’ll know it’s fermented when it gives off a slightly sour, cheesy aroma . Once fermented, add seasonings (spices, herbs, lemon juice, garlic). Mix well and store in the fridge .
